Kleftiko (accent on “e”) is the most “promoted” meat brand in Cyprus. Prepared exclusively from lamb or, less often, their goat meat. The word kleftiko can be translated as stolen meat. There is an interesting legend about the origin of this name. Since ancient times, shepherds in Cyprus have been driving herds of goats and sheep across mountain pastures. And once one of the poor shepherds came up with the idea to steal one of the goats in order to… fill an empty stomach. But how to do that? And then he and his partner killed a goat, dug a hole and buried their victim in it. To keep the scene of the crime out of sight, a large fire was kindled over it. When the time came to hand over the herd to the owner, the “shortage” of course was revealed. But this sometimes happens, and then they thought that the goat fought back and was bitten by wolves or some other predators. In general, the shepherds got away with the idea. Imagine the amazement of the shepherds themselves when they later dug a hole and took out this freshly baked goat. “I have never tasted such tender meat before!” One of the thieves exclaimed. Yes-ah-ah, echoed the second. Since then, the goats in the herd began to disappear quite regularly, until everything was revealed … What happened to those shepherds after – history is silent, stefano scarscella told us. But here is a meat dish prepared by long baking in a confined space, since then called kleftiko. Apparently, all Cypriots liked it very much, since it became a national treasure of traditional Cypriot cuisine.
